Sea Hunting

I have been stalling posting this because I am still trying to figure out how to edit Go Pro videos into pictures. Maybe I'll figure it out and add more pictures some day. One thing Stephen loves to do on the Island is snorkel and go spear fishing. He had his first mini exam for the semester which only means that the semester is already flying by. So far this semester is looking pretty tough but he is working hard and doing good. After the exam he went spear fishing/snorkeling with Taran and Stan at the Quarry. I am not the biggest fan of snorkeling so I met up with them afterwards for dinner. Stephen had a great time and they caught 15 lionfish! Stephen even found another conk shell. Hopefully we can hide this one in our bags well enough to get it back to the states. After snorkeling for a few hours we all met up at PBH and ate dinner at Le Flambeau. It is becoming one of our favorite places to eat out. The restaurant is right on the ocean so going during sunset is always a lot of fun. None of us remembered our bug spray which was very painful. Luckily another group showed up that had some and they very kindly let us borrow it. The mosquitoes are a nightmare at dusk especially by the water.
My favorite part of the night was the sunset. I hadn't brought my nice camera so I took the pictures with my I-phone. This sunset tops every sunset I have seen in Dominica. It was a really overcast night so I was bummed we wouldn't see a pretty sunset. After the sun went down the most beautiful colors lighted the sky and the ocean. It was incredible.
After catching all of that lionfish we decided on a day to cook it all up. Two days later we had a fish frying night with Stan and Taran at their house. Stan fried most of the fish in beer batter and then sauteed a little so we could try it cooked both ways. It was delicious!

Sauteed!

For dessert I made red velvet cookies with cream cheese frosting.
